After the washing process comes the PRESSING where the olives are broken and ground in the two succeeding processes and the paste is more and more amalgamated and refined.

In the DECANTER the paste is pressed to separate the oil and water: then the finished product is transferred into the antique Zire or Silos or directly bottled.

The last phase is the CENTRIFUGE which separates the oil and the water: this final product is filled in the old "Zire" or silos, or directly filled in bottles.
