Appearance: Slightly cloudy or clear through natural sedimentation.
Colour: Green with golden reflections.
Fragrance: Mildly fruity, fresh and fragrant with particular notes of celery and artichokes, fresh and dried fruit. Sweet with a hint of celery and sweet almonds, pistacchio and golden delicious apples. Perfect balanced aromatic falvour.
Consistency: Very fluid.
Use: Best when used raw with pinzimonio (fresh vegetables dipped in olive oil, lemon juice, salt and pepper), hors d’oeuvre, carpaccio (thin slices of raw meat or fish), pasta and risotto, steamed fish and shellfish, boiled meat, roast fish, white meat, cooked vegetables, ideal for frying and pastries.
Production: Very limited, packaged in special dark glass bottles with handles of 750cl, 500cl capacity.
Storage: Store in a cool dry place at ambient temperature 15C-18C. Keep away from direct heat and infra-red light as this will damage the oil.
